Vegan Chili

INGREDIENTS

  • 1 onion
  • 1 carrot
  • 100 g canned corn
  • Olive oil
  • 250 g canned red beans
  • 1 can of tomatoes peeled in juice (400 g)
  • Spices: sweet pepper and curry powder or chili mixture (optional)
  • Salt
Peel and cut the onion and carrot into small pieces. 
Sauté in oil in the pan 15-20 minutes. Always ignite, add salt, spices, corn and beans.
Let them soak for 2-3 minutes. Add the tomatoes by crushing them,
then simmer a minimum of 10 minutes while stirring occasionally.
You can add textured soy protein (available in organic stores) to the sauce for more variety! Rice is an ideal accompaniment for this chili.
